So the witty pi has a power button already, but I want to put the button on my case. Which button can I buy and then solder to the wittypi? I read in the manual it's an e latching switch, but if I buy such a switch, where can I solder it and will it interfere with the existing button?

No, it should be a push button, which will not maintain its state after you release it.

As introduced on page 27 in the user manual, the switch should be connected to SWITCH and GND pin in the unpopulated header P3. It will not interfere with the existing button.
